Histoire de la recette

La blanquette de veau est un plat complet typiquement français à base de viande de veau bouillie, de carottes et de sauce au beurre.
Le terme « blanquette » vient de ce que la sauce qui nappe le ragoût est blanche. Toutes les viandes blanches (dinde, poulet, lapin, porc), ainsi que l’agneau, peuvent se préparer « en blanquette » bien que la blanquette de veau reste la référence culinaire.
